Harvested in small bin crates, then placed over night in cooling chamber to maintain grapes’ freshness. Grapes were gently pressed the following morning. WINEMAKING:Fermentation started at low temperature in stainless steel tanks the continued and finished in 500L new Burgundian(France) oak barrels. AGING: Project X is aged for 9 months with frequent batonnage and without Malolactic fermentation to maintain freshness.
